Jesse and Danielle Cole each have well over a decade of experience in the restaurant industry are incredibly committed to the culinary process. Every night, Jesse begins preparing the next day’s meat at 10 p.m. before coming back at 4 a.m. to wrap it in butcher paper and smoke it in the oven for several more hours. Danielle prepares her dough three days in advance to allow flavours to develop for the perfect loaf of bread. However, this labour-intensive process has paid off for the couple—HomeTime has been selling out almost every day!
The Coles have both had a lifelong passion for culinary arts and are excited to own and operate their own restaurant. Jesse has been working in kitchens since age 14 and worked as a butcher’s apprentice for five years before attending the Culinary Institute of Canada in Charlottetown, which is the most highly esteemed school for culinary arts in the country. Danielle is a certified Red Seal pastry chef with over 10 years of experience, along with several years as a cook previously. Together, they’re the dream team that has made HomeTime a new favourite for many residents in the Brooks Region.
While Jesse and Danielle could have chosen to establish their restaurant anywhere, we are glad they selected the Brooks Region! After moving to Victoria 12 years ago to work together at a restaurant opening, the couple moved their family back to Alberta last July to raise their children with Danielle’s family in her hometown of Brooks. Over the last year, they have put thought and intention into every detail of their new restaurant and are appreciative of the community’s response to HomeTime’s opening.
